The Chante Perdrix domaine was established by Etienne Pécoul in 1896. Henri Nicolets' children Guy and Frédéric Nicolet (third and fourth generations) run it today and farm the 18 hectares around of the property. The vineyards are located towards the southern most end of the appellation and are planted with vines averaging 45 years of age that have the traditional galet stones on the soil surface. Guy and Frédéric Nicolet, look for perfect ripeness in their wines, thus producing one of the more flamboyant, exotically-scented, Provençal styled Châteauneuf-du-Papes.

"Deep ruby. Smoky cherry and grilled meat aromas verge on brooding. Deep, serious and impressively concentrated, offering weighty cherry and cassis flavours and finishing with good chewy grip. This is promising but will need cellaring."
