"Can't we just get rid of wine lists? Do we really have to be reminded every time we go out to a nice restaurant that we have no idea what we are doing? Why don't they just give us a trigonometry...

Domaine Bernard Moreau Pinot Noir 2010
The Pinot Noir is ripened on the heights of Les Cras, a clay-limestone slope facing south-east, a fairly rocky red soil. The grapes are handpicked and then hand sorted. A pre-cold maceration is done for 3 to 4 days in order to extract fruit. The fermentation itself lasts for 8 to 10 days under temperature control. Pumping over and push down are done as required.
